    What is phyllo?

    Phyllo is a thin pastry derived from the Greek word for "leaf" and is commonly used in the Middle East and Balkans as well as Greece. In Greece, we are familiar with a pie called "pita," which is made by layering several sheets of phyllo, wrapping them in a filling of feta cheese, eggs, spinach, etc., and frying them. The crispy phyllo can be used in a variety of ways, from cooking to sweets, depending on your ideas.
    Pita" is an essential part of Greek cuisine.
    Recommended recipe using phyllo: Minced meat pie
    Ingredients: 1 sheet phyllo (8 equal portions), olive oil (1 cup), ground beef (or ground beef, 400 g), 1 onion, 1 large carrot, 1 red pepper, tomato paste (1 tablespoon), dill (1 cup, chopped), Greek yogurt (250 g), 1 egg Greek yogurt (250g), 1 egg (1), allspice (half tablespoon), cheese powder (100g), salt and pepper
    Finely chop the onion, carrot, red pepper and dill.
    Saute minced meat, onion, carrot, red pepper and tomato paste in olive oil. Add salt, pepper, and allspice powder, mix well, add a little water (not to exceed the amount), and cook for about 15 minutes until the water evaporates and the mixture is just oil.
    Remove from heat and add eggs, cheese, yogurt, and dill.
    5) Coat the bottom of a baking dish with olive oil and lay out four sheets of phyllo, one on top of the other, coating each one with olive oil. (At this time, fold the protruding portions into the inside of the baking dish.)
    Bake in a preheated oven at 200℃ for 45 minutes.

    Evoiki Zimi was born in 1984 in Psakna, Evia, under the name "Zimarika Psahnon", as a small privately owned company producing pasta under the hands of a skilled proprietress, faithful to traditional recipes and using only the highest quality ingredients.
