Kefalograviera cheese is a tangy, spicy and buttery cheese made from goat and sheep's milk according to traditional methods. It is a very popular cheese in Greece. It is ideal for saganaki, a traditional Greek dish where the cheese is grilled with lemon and oregano. The cheese is elastic and stretchy, and goes well with bread and potatoes. It is also delicious grated over pasta.

Kefalograviera cheese belongs to the PDO and is called Kefalograviera cheese only if it is produced in the regions of Western Macedonia, Epirus, Aetolia-Akarnania, and Evrytania. Although it is a new cheese in Greece, not yet 30 years old, it has become one of the most commercially important cheeses, with about 3,000 tons produced annually throughout Greece.

It processes more than 70,000 tons of 100% Greek sheep, goat and cow's milk annually, collected from more than 5,000 dairy farmers spread over 514 villages. For this reason, major milk collection and cooling stations have been built in the four prefectures of Epirus, and milk is also collected from receiving stations in smaller communities. The company's insulated trucks are used to transport the milk to the main facilities, thus maintaining the freshness of the milk and the excellent quality of the product.
