[About the wine].
This wine has aromas of wild cherries, cassis, blackberries, and slightly sweet spice nuances such as cinnamon. It also has a hint of smokiness and sherry-like notes that add to its complexity. It is a wine with good acidity and tannins that blend well, and the soft fruit flavors of the varietal are well perceived.
Saperavi is a grape that goes well with game meats such as wild boar, and roasted wild birds.
It can also be enjoyed with a wide range of dishes such as lamb and pork skewers, hard cheeses, ragout, pâté, roast potatoes with ham, cheese, sausages, spaghetti, bean soups, salads, sandwiches, salami and cured ham.
The grapes are aged in an amphora called a quevery.

The Chonaz Malani vineyard is located in the village of Kurdgelauli, in the Tsinandali Conservation Area, at an altitude of 550 meters, and covers an area of 2 hectares. Kakhetian Mtsvane, Lukaziteli, and Saperavi are grown, and the wines are made using the traditional Georgian winemaking method of kvevri. The Chonaz Marani brand has become very popular in Georgia and is exported to many countries in the US and Europe.

In the Chonaz Marani vineyard, the vintage begins at the end of September. Before the start of the vintage, the ripeness of the grapes is checked and the best time for harvesting is chosen. The harvested grapes are transported from the vineyard to the cellar, where they are then pressed into kvevri using special machines. Once fermentation is complete, the vats are closed and covered with sand from the ground or river until spring.
during the first ten days of April, we open the vats, taste the wine, and do a secondary analysis in the laboratory. At that time, we separate the chacha (grape skins and stems) from the wine and transfer the wine to a new, clean vat, where the wine is allowed to age naturally before bottling. The winemaking process is traditionally accompanied by Georgian polyphonic singing, which is an integral part of the family and is accompanied by wine tasting. Wine making is an integral part of family life. Winemaking is deeply rooted in family life.
